How to Make Air Fryer Corn Ribs | Easy & Quick to Make for Dinner

Here’s what you’ll need:

  • Fresh corn on the cob (shucked)
  • Olive oil
  • Unsalted butter
  • Paprika
  • Garlic powder
  • Salt
  • Cilantro (optional)

For the Dipping Sauce:

  • Sour cream or Greek yogurt
  • Mayonnaise
  • Chili powder
  • Garlic powder
  • Lime juice
  • Salt

PREP WORK

First things first, let’s prepare the corn. Shuck the corn and remove the husk and silk strings. For an extra soft texture, microwave the corn for about 2 minutes. Let it cool for a minute before handling.

Now, grab a sharp knife and cut the ends off the corn to make quartering easier. Stand the corn on its flat end and carefully cut it in half. Take your time with this step to ensure a clean cut—safety first! After cutting it in half, slice down the middle again, giving you four corn rib pieces.

MAKE THE HERB BUTTER SAUCE

Melt the butter in a bowl, then mix in the olive oil, melted butter, paprika, garlic powder, and salt. Use a silicone brush to apply the sauce to the corn ribs. Alternatively, you can dip the ribs into the sauce. Remember to reserve some sauce to brush on the ribs after they’re cooked!

LET’S GET COOKING

Preheat your air fryer to 375°F (190°C). Place the corn ribs in the air fryer basket, ensuring they’re in a single layer and not overcrowded. Cook them for 10-12 minutes.

At the halfway mark, give the basket a good shake to ensure even cooking. Once they’re done, brush the ribs with the remaining sauce and plate them up!

MAKING THE DIPPING SAUCE

While the corn is cooking, let’s whip up a tasty Southwest dipping sauce. In a bowl, mix together sour cream (or Greek yogurt), mayonnaise, chili powder, garlic powder, lime juice, and salt. This sauce adds a creamy and zesty kick!

TIME TO TASTE

Now for the best part—let’s dig in! The corn ribs come out crispy and flavorful, with a delightful spice mix. They taste fantastic dipped in the sauce!

Feeling adventurous? I decided to spice up the dipping sauce with some chopped jalapeños. Just a little kick to elevate the flavor. You might want to adjust for the level of spice, though—sometimes those peppers pack less of a punch than expected!

OTHER SEASONINGS

I initially planned to use a Weber Garlic Jalapeno sauce, but let’s just say it was past its prime. Instead, I dusted the corn with Kinder’s Red Garlic Crushed Red Jalapeno and Garlic Seasoning, followed by a light spray of olive oil.

For extra flair, I added Meijer Grillers Barbeque Seasoning and a sprinkle of Lemon & Pepper Seasoning. Feel free to top it off with cilantro and lime juice for the finish.
